Each of the new light & lean meals contains less than 300 calories, 5 grams of fat, and 590 mg of sodium- quite a feat for a frozen meal. Additionally, each meal contains a nice variety of organic ingredients. In traditional Amy’s fashion, there is no compromising taste for health and all of the new meals are stunningly fantastic!

The meals come in four varieties : Black Bean & Cheese Enchilada (240 cal, 4.5g fat), Soft Taco Fiesta (220 cal, 4.5 g fat), Spinach Lasagna (250 cal, 5g fat), and Pasta & Veggies (210 cal, 5g fat)- each of which was provided to Brixton Street to try out.
Please note: the current selection of light & lean meals contain milk free of animal rennet making them fit for vegetarian consumption. The Black Bean & Cheese Enchilada and Soft Taco Fiesta varieties are gluten free.

Black Bean & Cheese Enchilada pairs a delicious, moist (but not at all soggy) enchilada which is covered with wonderful tomatillo & ranchero sauces and a light fluffy organic brown rice which has been mixed with carrots and sweet corn. Generously filling the enchilada are organic black beans, small tofu cubes, brown rice, veggies, and cheese- all of which combined give the enchilada a full, robust flavor that is classic Amy’s. The green sauce gives the dish a fresh, zesty flavor that is a really nice switch up from the traditional red enchilada sauce.

Soft Taco Fiesta combines layers of corn torilla, brown rice, shredded veggies, sweet corn, black beans, and cheese… all topped with tomatillo and ranchero sauces. The flavor and ingredients are very similar to that of the Black Bean & Cheese Enchilada, but, unlike the enchilada meal, the Soft Taco Fiesta contains no soy ingredients. Because of the omission of soy, Soft Taco fiesta is a great alternative to the Black Bean & Cheese Enchilada for those who enjoy Amy’s Mexican inspired dishes but are on soy-free diets (or those that just don’t like the texture of tofu).

Spinach Lasagna has a wonderful flavor and even looks really lovely in person- doesn’t that tomato sauce look super fresh? The bright colors are definitely a reflection of the fresh tomato and vegetable flavors in this pasta dish. The filling is an always classic spinach and ricotta and its hard to believe that this dish weighs in at just 250 calories! The combination of the delicious, flavorful pasta sauce, awesome filling and firm lasagna noodles make this dish a definite keeper.

Pasta & Veggies – another dish with a lovely, fresh taste! I absolutely love the paring of broccoli and asparagus in this dish. The veggies have nice, subtle flavors that meld perfectly with the tomatoes, basil and Parmesan cheese. The overall texture is great, definitely wayyy above average for a frozen meal. Super delicious!
Overall, Amy’s Kitchen Light & Leans meals have lovely, fresh flavors and come in very appealing options. The meals are large enough to leave you satisfied, but light enough to not leave you feeling stuffed and bloated afterward. I shared these meals with several other people and there was not a single meal that was met with any negative comments. All in all, another great line from Amy’s, which is of course, pretty much exactly what we expected!

Hey would you mind stating which blog platform you’re working with? I’m planning to start my own blog soon but I’m having a hard time selecting between BlogEngine/Wordpress/B2evolution and Drupal.
